The irresistible aroma of sizzling chicken, freshly fried fish and roasted duck wafts through the lively streets of Imphal in Manipur, drawing crowds even before the stalls come into sight.

Street food vendors across the city, now operating with improved hygiene and upgraded standards, are attracting a steady stream of local residents eager to enjoy a quick and flavourful bite.

Poornima, owner of a street food stall, says, "There is chicken and pork available. Mostly, there are variety of chicken-made items. Customers come here in good numbers. We don't count, so I cannot say the exact number."

The growing popularity of these stalls has been supported by initiatives from the Food Safety and Standards Authority of India, which has introduced training programmes focused on food safety, cleanliness and quality standards.

According to Sopam Kunal, designated officer, food safety and administration, West Imphal, "We give them practical training in food safety personal hygiene and contamination prevention, safe cooking practices and waste disposal. We also have the mobile food testing facility. Here we conduct the on-spot testing so that the food served is of quality and safe to the consumers. Next, we have the awareness, registration and sensitization programs."

With better hygiene practices in place, these street food hubs have become welcoming spaces for families and children, offering affordable options without compromising on quality.

Blosson, a local resident, says, "Street food is affordable and now, the quality of street food is also good. Comparing to the cafes and restaurants and all, they are much better in case of hygiene and according to the price and quantity, street food is also good."

Rathan Thansem, another local resident, says, "Hotel food is also fine as well as is the street food. But with regard to the taste, it is different. So, children are more attracted to the street food. And that is why we are here. Whenever there are holidays, then we come along with the family."

The thriving street food scene in Imphal not only shows off the area's delicious flavours, but it also creates more job opportunities, bringing together locals and tourists who love food.
