Researcher Dr. Natalie Hyacinth created a track designed to make chocolate seem sweeter and creamier

We all know the comforting power of music, it can cheer us up, relax our minds, and has been part of daily life for centuries. But what if it could also change the way food tastes?
A new study suggests exactly that, showing how the right tune can make chocolate seem sweeter, smoother, and even more indulgent.
What did researchers find?
The discovery comes from Dr Natalie Hyacinth, a music expert at the University of Bristol, who has been looking at how sound shapes our senses.
Her work shows that when particular melodies, beats and tones are paired with chocolate, the brain processes the flavour as richer and more satisfying.

How does it work?
Dr Hyacinth has spent over 60 years exploring the connection between sound and taste. She explains it through a process known as multisensory integration where different senses come together to create a more layered experience.
Her research found that gentle, flowing music in a major key makes chocolate taste creamier and sweeter. On the other hand, sharper tones bring out a slightly bitter edge. She also noticed that fast beats feel more in tune with fast food, while slower, soothing tunes enhance the pleasure of eating desserts.
What’s special about the ‘Sweetest Melody’?
Taking these findings further, Galaxy Chocolate joined hands with Dr Hyacinth to create a track designed to heighten the taste of chocolate.
The result is a 90-second piece called Sweetest Melody. It has been composed at 78 BPM the same length of time it usually takes for chocolate to melt in the mouth.
Each instrument plays a role: piano notes are used to lift sweetness, strings add a creamy feel, and the harp gives the impression of smoothness.

The track is now available on both YouTube and Spotify for anyone who wants to try the experience for themselves.
Dr Hyacinth believes that the joy of chocolate is not only in the taste but can be deepened with music. She says that pairing the right tune with a bite of chocolate makes the whole moment feel richer and more multi-dimensional.
