If you are looking to try something different with the regular ingredients, here is a useful recipe. Use the humble potato and cauliflower to create a different curry that goes well with rice, chapatti or appam.
Ingredients
- Vegetable oil: 2 tablespoons
- Onion: 1 nos (sliced)
- Ginger: 1 large piece (sliced)
- Garlic: 3 cloves (sliced)
- Turmeric powder: 1/2 teaspoon
- Cumin powder: 1 teaspoon
- Garam masala: 1 teaspoon
- Tomato: 1 nos (sliced)
- Cauliflower: 1 cup (chopped)
- Potato: 2 nos (chopped)
- Green chilli: 2 nos (sliced)
- Lemon juice: 1 teaspoon
- Coriander leaves: For garnishing
Preparation
Heat up oil in a pan and saute the onion. Add the ginger, garlic, green chilli and cumin powder. Saute for a minute and then add the tomato. Once the tomato softens, add the cauliflower, potato and garam masala. Mix well and cook on a medium heat for 20 minutes. Don’t forget to stir well occasionally. Add water if you desire. Once the vegetables are cooked, add the lemon juice and mix well. Garnish with coriander leaves and it's ready to serve.
