The Madurai centre has trained more than 4,000 people since 2017, with skilled porotta masters earning up to Rs 1,500 a day.

Madurai (Tamil Nadu): For those looking to master the art of making porotta, a training centre in Madurai offers a 10-day course covering everything from handling the dough to stretching, shaping and cooking the popular flatbread.
The Selfie Porotta Coaching Centre, started by Mohammed Kasim in 2017, was established in response to the growing demand for skilled porotta masters. More than 4,000 people have undergone training at the centre so far, with participants arriving from Tamil Nadu as well as other states, including Kerala.

The centre attracts aspiring hotel owners, restaurant operators and those planning to start small eateries. Hostel facilities are also available for trainees.

Learning the art of making porotta
The training covers several varieties, including bun porotta, coin porotta, nool porotta, kothu porotta, Malabar porotta and Ceylon porotta.
The course begins with the basics of handling dough. Trainees initially use a towel to practise the technique of stretching and tossing the dough before moving on to practical sessions involving kneading, flattening and cooking.
The 10-day programme is designed to give trainees hands-on experience in the techniques required to prepare different types of porotta.

It’s not just about porotta
The centre’s training extends beyond porotta-making. Participants can also learn to prepare dosa varieties such as thattu dosa and masala dosa, along with different curries and gravies.
Training is also offered in making chapathi, phulka and wheat porotta. Chinese dishes, including chicken rice, chicken 65, chicken noodles, chilli chicken and chilli porotta, are part of the programme too.
From training to employment
According to Kasim, the centre assists trainees in finding jobs after their training. Skilled porotta masters can earn around Rs 800 to Rs 1,500 a day, while those with greater expertise can earn more.
The demand extends beyond India, with people from Singapore, Malaysia and Gulf countries approaching the centre in search of trained porotta masters.
Some restaurant owners also come to the centre to sharpen their skills, while others have gone on to start their own hotels after completing the training, Kasim says.
