According to Google Maps' debut Fan-Favourite Dining List, online review references to ‘dosa’ in Seattle skyrocketed by 136% over the past year.

The study analysed restaurant ratings, user reviews and direction requests across 10 major global metropolitan areas, including New York, London, Tokyo, Chicago and Melbourne. While Western markets have historically associated Indian cuisine primarily with North Indian classics like butter chicken and garlic naan, South India's rice-and-lentil crepe is now taking center stage.

Popular Seattle dining spots such as Shri Ananda Bhavan and Chennai Express are at the forefront of this trend. Beyond its rich flavour profile, food culture analysts attribute part of the dish's international surge to its naturally gluten-free, fermented batter composition, appealing directly to health-conscious diners.
