Thiruvananthapuram: The revised liquor policy of Kerala suggests a desire of the government to leverage the potential of toddy (local alcohol) to boost the state's tourism industry. The government's aim is to revive, publicise, and modernise the centuries-old toddy-tapping industry in the state.

The government seeks to attract tourists by promoting Kerala cuisine and toddy through local toddy shops. The current shops will be converted into public eateries.

Meanwhile, toddy tapping will be promoted throughout the state through plantation initiatives. The toddy sold through the outlets will also be branded as 'Kerala Toddy'. 

At the same time, rather than wasting leftover toddy after sales, it could be utilised to produce products such as vinegar, with the help of Kudumbasree.

The regulations on how much toddy can be collected from a coconut tree will be re-evaluated. At present, the permitted amount is 2 litres per tree. However, there have been reports of individuals in specific regions receiving more than the allowed limits.

A "Track and Trace" system will also be implemented to oversee the transportation of toddy between districts.
