Ingredients
- Eggs: 5 nos (boiled)
- Vegetable oil: 3 tablespoons
- Gram flour: 2 tablespoons
- Green chilli: 2 nos (sliced)
- Curry leaves: 12 sprigs
- Water: 500 ml
- Salt: As per taste
- Garam masala powder: 1 pinch
- Coriander leaves: For garnishing
- Garlic: 3 cloves
- Ginger: 1 inch piece
- Turmeric powder: 1/2 teaspoon
- Chilli powder: 1 teaspoon
- Tamarind paste: 1/2 tablespoon
Preparation
Grind the ginger, garlic, turmeric powder, chilli powder and tamarind paste into a fine paste with a bit of water. Take the gram flour in a bowl and turn it into a paste by adding a little bit of water. Heat up oil in a pan and sauté the green chillies and half of the curry leaves. Add the ginger, garlic and tamarind paste. Sauté for a few minutes. Add water and cook for 2-3 minutes. Mix in the gram flour paste. Ensure that the paste is completely dissolved and that there are no lumps. Cook for 5 minutes. Add the garam masala powder. Turn off the heat and add the boiled eggs. Garnish with the remaining curry leaves and coriander leaves. Maharashtra style egg curry ready.
