The aroma of freshly baked muffins can turn any ordinary day into a special occasion. Here are simple yet delightful muffin recipes that are easy and delicious. BANANA CHOCOLATE MUFFINS 

Ingredients

  • Ripe Robusta- 3 nos
  • All purpose flour- 1 ¾  cup
  • Baking powder- 2 tsp
  • Baking soda- ¼ tsp
  • Salt- a pinch
  • Cinnamon powder (optional) ¼ tsp
  • Sugar - ½ cup
  • Vegetable oil / butter - ⅓ cup + 1 tbsp
  • Egg- 1
  • Milk- ¼ cup 
  • Vanilla essence- 1 tsp
  • Chocolate chips- ¾ cup

Preparation

Preheat the oven to 350 F.

In a bowl, mix flour, baking powder, baking soda, salt and cinnamon powder and set aside.

In another bowl, mash the banana well. To this, add sugar, butter, egg, milk and vanilla essence to it and mix well. Add the dry ingredients to this and mix until no lumps are found. (Do not over mix)

Add chocolate chips to this, fold and combine. 

Pour three-quarters of this batter into a greased muffin pan. Bake for 17- 20 minutes or until a toothpick comes out clean.

BLUEBERRY MUFFINS

 

Ingredients

  • All purpose flour-1½ cup
  • Baking powder-½ tsp
  • Fresh blueberries- 1 cup
  • Sugar- 1 cup
  • yogurt- 1 cup
  • Olive oil- 1 cup
  • Cocoa powder- 1 tbsp
  • Whipped cream – for frosting

Preparation:

Preheat the oven at 180 degrees for 10 minutes. 

In a bowl, combine sifter flour, cocoa powder and baking powder. Into this add olive oil, yogurt and sugar. mix well. 

Coat the blueberries in a little flour and fold in. 

Pour three-quarters of  the cake batter into greased muffin tins and bake for 10 minutes. 

Garnish with whipped cream and blueberries. 

CHOCO VANILLA MUFFINS

 

Ingredients

  • Maida- 1 ½ cup
  • Powdered sugar - 1 cup
  • Egg - 2 nos
  • Vegetable Oil- ¼ cup
  • Milk- ½ cup
  • Butter- ½ cup
  • Vanilla essence- ½ tsp
  • Baking powder- 1 tsp
  • Baking soda- ½ tsp
  • Chocochips - ½ cup

 Preparation:

Preheat the oven at 200 degrees for 10 minutes. 

Beat the butter and sugar together until creamy. 

To this, beat the eggs by adding one at a time  and then add oil and beat well.  Add the vanilla essence and milk into it.

Sift the flour, baking powder and baking soda into the wet ingredients (butter egg oil mixture) and beat lightly. Add chocolate chips to the batter and fold in.

Pour the batter into the greased cupcake moulds and bake in the oven at 180 degrees for 20-25 minutes.
