Carrot Cupcake

Ingredients:

  • Sugar - 225 g
  • Vanilla essence - ¼ tsp
  • Sunflower oil - 160 g
  • All purpose flour- 150 g
  • Nutmeg powder – 500 mg
  • Cinnamon powder - 500 mg
  • Baking powder - 500 mg
  • Baking soda - 500 mg
  • Chopped walnuts -70 g
  • Grated Carrot - 100 g
  • Hot water - 1 tbsp
  • Egg -2

Preparation:

Preheat the oven at 170°C for 10 minutes. 

In a bowl sift and add the flour, baking powder, baking soda, cinnamon powder and nutmeg. Mix well.

In a separate bowl, beat 2 eggs and sugar at a medium speed for 5 minutes. To this, add sunflower oil, vanilla essence. Mix gently. 

Add the dry ingredients to the wet ingredients. Fold well. 

Add walnuts, grated carrots and hot water into the cake batter and combine well. 

Pour this into greased cupcake molds and bake for 20 minutes at 170 degrees c. 

Once cooled, decorate with your choice of frosting.

Carrot pumpkin soup

Ingredients:

  • Butter / olive oil- 1 tbsp
  • Onion, chopped- 1
  • Garlic, crushed – 4 
  • Cinnamon powder- ½ tsp
  • Carrot, finely chopped -2
  • Pumpkin, cut into small pieces – 400g
  • Vegetable stock- 2 cups
  • Salt- to taste
  • Pepper powder- as needed

Preparation:

Add butter to a pressure cooker. Once the butter melts, saute onion and garlic for 2 minutes. Into this, add chopped pumpkin and carrot. Saute for another 2 minutes. 

Add the vegetable stock to this and cook for 3 minutes. When it cools down, blend the contents well in the mixer. Pour the blended soup into a pan and bring to a boil. Add water if needed. 

Add salt, pepper powder and cinnamon powder. Cook for 2 minutes.

Serve hot.

Carrot Date Cake

Ingredients:

  • Dates-150 g
  • Nuts-25 g
  • Carrot-200 g
  • Flour-100 g
  • Date syrup-25 g
  • Eggs -2
  • Sunflower Oil-150 mg
  • Baking powder- 2 g
  • Icing sugar-50 g
  • Milk-20 ml

Preparation:

Chop dates and carrots into small pieces. Grind this in a mixer.

Into a bowl, add the ground carrot and dates. To this add nuts, flour, eggs, baking powder, icing sugar (or regular sugar) and milk and beat well. 

Add sunflower oil and mix well. Keep the batter aside for ½ hour.

Pour the batter into a greased cake pan. Bake for 45 to 60 mins or until a toothpick comes clean at 180 degrees.

Serve with tea or coffee.
