Both brinjal and basil are great immunity boosters. Here is a recipe that combines the goodness of both.

Ingredients

  • Brinjal: 2 nos
  • Basil leaves: 4 leaflets
  • Garlic: 4 cloves
  • Salt: 3/4 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Black pepper powder: 1/2 teaspoon
  • Curry leaves: 2 leaflets
  • Mustard seeds: 1 teaspoon
  • Oil: 1/2 teaspoon

Preparation

Finely slice the brinjals lengthwise and soak them in water. Finely chop the basils, curry leaves and garlic. Put them in a bowl and add salt, black pepper and turmeric powder and mix well. Thoroughly drain the brinjals and squeeze all the water out. Add the drained brinjals into the bowl and mix together. Heat up oil in a pan and crackle the mustard seeds. Add the brinjal mix and cook until tender without adding water.
