Rajasthan summer is making Bikaner rasgullas harder to find
The scorching summer heat in Rajasthan’s Bikaner is taking a toll on milk production, affecting the supply of dairy-based sweets, including the city’s famous Bikaner Rasgulla. Dairy officials say cows naturally produce less milk during extreme temperatures, leading to reduced availability of products such as rasgullas, gulab jamuns, paneer, and other sweets.
The situation has become more challenging due to the ongoing wedding season, when demand for milk-based delicacies rises sharply. Sweet shop owners say the shortage makes it difficult to meet customer demand despite efforts to source milk from outside the region and maintain reserves.
Local traders estimate rasgulla production drops by nearly 25 percent every summer. Meanwhile, demand for cooling dairy products like curd, lassi, buttermilk, and ice cream increases notably.
Despite the seasonal shortfall, Bikaner’s dairy industry continues to adapt and keep business running.
