Foodies, rejoice! The world of food is evolving faster than ever, and 2025 is set to be an exciting year for culinary enthusiasts. With global flavours blending, chefs experimenting with tradition, and a strong focus on health and sustainability, there’s a lot on the menu.

Let’s dig into the tastiest food trends that are taking the spotlight this year.  

Asian flavours take centre stage 

Asian cuisine isn’t new, but its popularity has skyrocketed. From gochujang and sambal to matcha and kimchi, these flavours are now everywhere—on menus, in supermarkets, and even in snacks. Sushi, ramen, and barbecue continue to win hearts, while Asian dumplings are a hit in frozen food aisles.  

South Korean chain H Mart now boasts 96 stores globally, with 99 Ranch (Chinese) and Patel Brothers (Indian) following suit. The message is clear: Asian flavours are here to stay, and they’re influencing how the world eats.  

Heat, but make it nuanced  

Love a bit of spice? You’re not alone. Chillies are getting their moment in the sun, with a shift towards exploring flavour over just heat.

“It’s less about how much heat you can stand and more about the flavour nuances,” says Leana Salama of the Specialty Foods Association.  

Chilli oils with crunchy bits, like salsa macha from Mexico, are all the rage. Sweet-and-spicy snacks, chilli-flavoured nuts, and even spicy chocolate are heating up shelves everywhere.  

Food as medicine  

Health-conscious eating has gone mainstream. The “food is medicine” trend has people looking for ingredients that boost mood and health. Functional mushroom beverages are a healthier alternative to alcohol, and these mushrooms are also popping up in teas and coffees.  

Non-alcoholic drinks featuring adaptogens and other “functional” ingredients are growing in popularity.

"People want their food and drinks to do more than just taste good—they want them to be good for their bodies too," Salama adds.  

Snacks with a crunch 

Crunch is the texture of the moment, and salty snacks are thriving. Seaweed is leading the way, offering a healthy, sustainable option with its strong umami flavour. Pistachios are also having a moment, showing up in everything from panettones to lattes.  

And let’s not forget the protein craze. Makers are finding creative ways to add protein to snacks and meals, with cottage cheese trending as a versatile ingredient.  

Sustainability and transparency

Consumers want to know more about their food. How was it grown? Where was it sourced? Food waste reduction and eco-friendly packaging are becoming more important. Transparency isn’t just a buzzword—it’s a demand.  

Micro trends worth mentioning

There are plenty of smaller trends making waves too. Think AI-assisted grocery shopping, oversized sandwiches, lavender-infused drinks, freeze-dried foods, and sourdough’s comeback. Even balsamic vinegar is being turned into pearls!
