The four-ingredient summer ice pops: Apple, blueberry and ginger

Weekend plans change quickly. One minute it's a calm afternoon, the next you've got hungry kids in the kitchen asking for snacks every ten minutes. That's exactly where these blueberry, apple and ginger ice pops come in.
Made with just four ingredients and a blender, they're easy enough to prepare ahead of time and refreshing enough to keep everyone, adults included, happy when the temperature starts climbing.
Apple, Blueberry & Ginger Ice Pops
Ingredients
Makes 10
- 2½ cups fresh blueberries
- ¾ cup cloudy (unfiltered) apple juice
- 1 tbsp freshly grated ginger
- 1 tbsp fresh lemon juice
Method
- Add the blueberries, apple juice, ginger and lemon juice to a blender and blend until completely smooth.
- Divide the mixture between ten ice-pop moulds and insert the sticks.
- Freeze for at least six hours, or until completely firm.
- To serve, briefly run the moulds under warm water to release the ice pops.
- Enjoy immediately, or store in the freezer for up to three months.
