No milk in payasams with jaggery; Pazhayidam Mohanan Namboothiri shares tips through YouTube channel

Kottayam: Though no feast and festival is allowed during lockdown, renowned chef Pazhayidam Mohanan Namboothiri is busy introducing his unique recipes and cooking hacks to the people. He shares the secrets of lipsmacking dishes through the YouTube channel of his son Yadhu Pazhayidam.
"There are no secrets in cooking but only combinations of the six basic tastes. I believe I could mix them in the right way and that is the secret of my success," Pazhayidam Mohanan Namboothiri said.
As he suggested that the channel should not be confined to his recipes, Yadhu is travelling acorss the state introducing variety of indigenous dishes for the viewers. Pazhayidam Mohanan Namboothiri appears once in a week with his own recipes.
Do not add milk in Payasams which are prepared with jaggery. But coconut milk can be used in it. While having Sadya, do not eat buttermilk and ghee together. If we are having lentils, then ghee also can be consumed, the chef shared the secrets.
Ghee will resolve the digestive issues caused by lentils and the fat in ghee also will be safely balanced. While having Kalan dish, Olan also should be eaten as the latter dilutes the acidity of the former, Pazhayidam Mohanan Namboothiri shared tips for having food too.
Pazhayidam Mohanan Namboothiri took over the duty of preparing food for school youth festival since the district youth festival held in Kottayam in 2000. He cooked food for 15 state-level school youth festivals so far. He was honoured with the government's Pachakasreshta Award also.
He prepared for the highest number of people during Attukal Pongala in 2020. He has arranged a modern kitchen at Kurichithanam to prepare food for 10,000 people at a time. But Covid outbreak happened at the time. He has a team of 400 members including cooks and serving staff.
