Chef Suresh Pillai’s special recipe - Kollam style Idli

What a mouth-watering kind of Idli! Ginger, green chillies and curry leaves boiled in Portia leaves (Poovarasu in Malayalam). Served hot with coconut chutney, a tight veggie-rich Sambar and tea!!
Ingredients
Raw rice - 500 grams
Black gram - 350 grams
Fenugreek - 3 grams
Rice/ Flattened rice (aval) - a handful
Ginger finely chopped - 20 grams
Chopped green chillies - 2
Chopped curry leaves - as needed
Salt - to taste
How to prepare
Soak rice and black gram separately in water for six hours. Grind fenugreek and flattened rice or rice well. Add the remaining ingredients and keep them aside for 12 hours. Cook the idlis in the idli maker the next morning. If banana leaves are available, you can place it on idli maker and pour the batter onto it. Kollam style idli is ready to serve.
