Who said kebabs are only for non-vegetarians?

When you hear the word kebab, what comes to mind is meat being cooked on a skewer on a grill or in an oven. But who said that kebabs are only for the non-vegetarians? Here is seekh kebab that are a wonderful combination of different vegetables.
Ingredients
- Oil: 2 tablespoons
- Cumin powder: 1/2 teaspoon
- Onion: 1/4 cup (chopped)
- Ginger-garlic paste: 1 teaspoon
- Green chilli: 1 nos (chopped)
- Gram flour: 2 tablespoons
- Paneer: 100 grams (grated)
- Potato: 2 nos (boiled and mashed)
- Garam masala: 1 teaspoon
- Cabbage: 1 cup (chopped)
- Carrot: 1 nos (grated)
- Green peas: 1/2 cup (cooked)
- Beans: 1/2 cup (chopped)
- Coriander leaves: As per requirement
- Mint leaves: As per requirement
- Chat masala: 1 teaspoon
Preparation
Roast the gram flour in a pan for a few minutes. Transfer it to a bowl and keep it aside. Put the pan back on the heat and add the ginger-garlic paste, green chilly, onion, green peas, cabbage, beans, potato, carrot, paneer, garam masala, chat masala, cumin, coriander leaves and mint leaves. Mix well and saute for a few minutes. Take it off the heat and let it cool down to room temperature. Then make eight balls using the vegetable mix. Take skewers and spread each ball evenly on to the skewer. (kebabs can be done without skewers by turning them into small patties or as in the same shape of sausages) Apply gram flour on top to keep it in place. Heat up oil in the pan and fry the kebabs on all sides until they are well done.
