Street food 'Goli Baje' steals heart of foodies

Goli Baje that is fondly called Mangalore Bajji is a savoury evening snack in Mangalore of Karnataka. Goli Baje is deep-fried Maida balls that has a spongy texture inside and is crispy outside. These are prepared using all-purpose flour or Maida, curd and very few spices.
Ingredients
- Maida -1 cup
- Curd - ½ cup
- Baking soda - ¼ tsp
- Hing/asafoetida - ¼ tsp
- Salt to taste
- Curry leaves - finely chopped
- Green chilli - 1, finely chopped
- Ginger - ½ inch, finely chopped
- Pepper - ½ tsp
- Cumin seeds - ½ tsp
- Oil - for frying
Preparation
Take a mixing bowl and add maida and curd or buttermilk. Now add chopped curry leaves, green chillies, ginger, jeera and pepper. Now add baking soda, salt and mix it well. Now, beat the batter well. Keep it aside for one hour.
Now dip the hand in cold water and take a small ball sized batter and drop it in hot oil. Fry the ball in medium flame. Stir it properly. Drain off the oil once it turns golden brown and crisp. Goli Baje can served hot with coconut chutney.
