Do you have beetroots in your kitchen? Beetroot is such a wonderful vegetable that helps to maintain good cardiovascular health. Here are three healthy and tasty recipes that can be made with beetroot at any time easily. 

Beetroot juice

Ingredients

  • Beetroot- 1 small
  • Apple - 2 small
  • Celery stalks- 2
  • Carrots- 1 or 2
  • Lemon or Lime- ½ 
  • Ginger- ½ inch

Peel and cut the washed beetroot into long pieces. Cut fresh apple, carrots, ginger and celery into long pieces. Now add all these ingredients into a mixer and blend. Squeeze the half lemon into prepared juice and mix well. Serve them in a chilled glass and drink immediately.

Beetroot pulao

Ingredients

  • Basmati rice- 1 cup
  • Beetroot chopped- 1 cup
  • Green peas- ½ cup
  • Onion - 1 sliced
  • Ginger garlic paste- 1 teaspoon 
  • Coconut milk thin- 1 cup 
  • Red chilli powder- 1 teaspoon 
  • Coriander powder- 1 teaspoon
  • Turmeric powder- ⅛ teaspoon 
  • Coriander leaves chopped- 2 tablespoon 
  • Cinnamon, Cardamom, Clove
  • fennel seeds- ½ teaspoon 
  • Oil / Ghee- 1 tablespoon
  • Bay leaf- 1 
  • Salt As needed

Soak basmati rice for at least half an hour. Heat oil/ ghee in a pan, add Bay leaf, Cinnamon, Cardamom, Clove and fennel seeds. Add thinly sliced onion and ginger garlic paste. Fry for a minute in medium flame. Now add the beetroot and green peas. Spread a little salt and fry for 2 mins.

Add turmeric, chilli powder and coriander powder. Add coconut milk and a cup of water and mix well. When it boils, add the required salt and basmati rice. Cover and cook for 14 minutes at the lowest possible flame with a lid. At last, garnish with coriander leaves.

Beetroot halwa

Ingredients

  • Ghee / clarified butter- 2 tbsp 
  • beetroot (grated)- 4 cup 
  • Milk- 1 cup 
  • Sugar- ¼ cup 
  • cashew (chopped)- 6 
  • cardamom powder- ¼ tsp 

Heat ghee and beetroot in a pan. Saute well for 2-4 minutes until the beetroot is smashed properly. Now add milk and mix well. Cover and boil for 20 minutes stirring occasionally. Further, add sugar and mix well. After 5 minutes, ghee separates from halwa. Now add cashew and cardamom powder. Beetroot halwa is ready.
