Yes, you can make a curry with pappadams
We all know that Pappadams are a must during Sadya. They have even become a teatime snack. But did you know that a tasty curry can be made with this crispy delicacy? Here is how.
- Pappadam: 5 nos
- Grated coconut: Half of a coconut
- Shallots: 3 nos
- Garlic: 3 cloves
- Green chilli: 2 nos (chopped)
- Curry leaves: 3 leaflets
- Black pepper: 1 teaspoon
- Cinnamon: 2 sticks
- Cloves: 2 nos
- Star anise: 2 nos
- Fennel seeds: 1 teaspoon
- Chilli powder: 1 teaspoon
- Coriander powder: 1 teaspoon
- Turmeric powder: 1/4 teaspoon
- Mustard seeds: 1 teaspoon
- Dried red chilli: 4 nos
- Salt: As per taste
- Oil: As per requirement
Tear the pappadams into small pieces and fry. Keep them aside. Heat up some oil in a pan and fry the shallots, garlic, 1 green chilli, two thirds of the curry leaves, black pepper, cinnamon, cloves, star anise and cumin seeds. Into this, add the chilli powder, turmeric powder and coriander powder into this and fry for five more minutes. Take it off the heat and let it cool down to room temperature.
Pour the mix into a blender and grind it to a fine paste. Pour the masala paste into a pan. Pour in a little bit of water into the blender and shake it to take out the remaining paste. Pour this water into the masala paste. Throw in the remaining green chilli and bring the masala paste to a boil.
Once the paste comes to a boil, add the pappadams and mix well. Ensure that all the pappadam pieces are well coated in the masala. As soon as it starts bubbling, take the curry off the heat. In another pan, crackle mustard seeds, dried red chilli and the remaining curry leaves. Add it into the pappadam curry and mix well. Serve hot.
