Stay healthy with red spinach soup
A close cousin of the regular green leafy vegetable, red spinach has many health benefits. Here is how to make a delicious soup with red spinach.
- Red spinach: 1 bunch
- Tomato: 1 large
- Okra: 3-4 nos
- Onion: 1 large
- Carrot: 1 nos
- Cumin powder: 1 teaspoon
- Black pepper powder: 1 teaspoon
- Shallots: 4-5 nos (finely sliced)
- Ghee: 1 teaspoon
- Salt: As per taste
Roughly chop all the vegetables and put them into a pressure cooker. Add adequate amount of water and cook until three whistles.
Strain the vegetables. Make sure to squeeze out all the liquid from the vegetables. Pour the liquid into a pot and add salt. Bring it to a boil. Add black pepper and cumin. Let the liquid bubble away on a low heat.
In a small pan, heat up the ghee and fry the shallots. Add this to the spinach liquid. Mix well and take it off the heat. Red spinach soup is ready.
