Maddur vada is a very popular tea snack, originated from a place called Maddur, a small town near Mandya in Karnataka. 


Maida – ½ cup

Rice flour – ¼ cup

Gram flour – ¼ cup

Rava / Sooji – ¼ cup

Onion – 1 no

Green chili – 2 no

Ginger (chopped) – ¼ tsp

Curry leaves (chopped) – 1 tsp

Coriander leaves – 1 tsp

Asafoetida – A pinch

Butter – 2 tsp

Salt – To taste

Oil - Accordingly


Mix sliced onion, curry leaves, coriander leaves, green chilies and salt, with a slight pressure. 

Press the mixture to the bottom of a thick vessel. Keep aside for about 10 minutes.

Add maida, gram flour, rice flour, sooji, asafoetida, butter and hot oil.

Mix well by sprinkling little water and make a slightly firm dough.

Make lemon sized balls and flatten it by wrapping it.

Deep fry in oil.
