A super vegetable soup to replace tea and coffee
Here is an easy, tasty and healthy vegetable soup that you can have instead of tea.
- Tomato: 100 grams
- Beetroot: 100 grams
- Carrot: 100 grams
- Ash gourd: 100 grams
- Beans/cluster beans: 100 grams
- Spinach: 100 grams
- Curry leaves: 4 sprigs
- Shallots: 5 nos
- Lime juice: 1 lime (large)
Roughly chop all the vegetables. Heat up a pan and add the vegetables. Pour in 2 litres of water. Bring it to a boil and reduce to a quarter (500 ml). Strain and squeeze the liquid out of the vegetables. Add lime juice and serve hot. Alternatively, ½ cup of coconut milk can be added instead of lime juice.
