Tapioca is popular as the peasant’s dish. It is a great root vegetable to have along with fish, beef or pork. Tapioca chips is a very popular snack that everybody loves. But do you know that the humble tapioca can be turned into a super snack for tea? Here is how you can make crispy Tapioca Vada.
Tapioca: 1 kg
Ginger: 1 thumb sized piece
Onion: 1 nos (large, finely chopped)
Green chilli: 5 nos (finely chopped)
Chilli powder: 1 tablespoon
Maida: 2 tablespoons (sieved through a fine strainer to remove lumps and granules)
Oil: As per requirement
Skin and chop the tapioca into small chunks. Cook the tapioca in a pressure cooker with some salt and drain it. Transfer the tapioca into another bowl and mash them finely using a ladle. Add the onion, ginger, green chillies and mix thoroughly. Add the chilli powder and incorporate it well and evenly. Then add the maida and mix well. Roll the mix into small balls.
Flatten them into the shape of vadas using the palm or into the desired shape using a dough shaping tool. Deep fry them in oil. (Beware that the tapiocas just need to be light or golden brown as it is already cooked. Ensure not to burn them). Crispy Taioca Vada is ready.
