Humble sweet potato in a fried avatar
Sweet potato is a very healthy and nutritious root vegetable that usually does not receive the credit it deserves. In Kerala, sweet potato is mostly consumed boiled or steamed with a spicy chutney. Here is how to dress up this humble root vegetable in a fried avatar.
- Sweet potato: 2 nos (medium sized)
- Bengal gram flour: 1 cup
- Egg white: Of two eggs
- Coconut oil: As per requirement
- Coriander leaves and curry leaves: Finely chopped (2-leaflets)
- Salt: As per taste
- Corn flour: 2 tablespoons
How to prepare
Peel the sweet potatoes and finely slice them into rounds. In a bowl, add gram flour, egg whites, coriander and curry leaves, salt and corn flour and prepare the batter. Add water if needed to adjust the consistency. In a pan, heat up the coconut oil. Dip the sweet potato slices in the batter one by one and fry them in oil. Take them out once they are golden brown.
