Who would not want to have some variety in evening snacks. Full of vegetables and eggs, here is a recipe that will be tasty and healthy at the same time.
Beetroot: 1 nos (large and grated)
Boiled potato: 1 nos (large and grated)
Green chili: 5-6 nos (as per taste)
Spinach: 1 cup (grated - red and green can be used)
Onion: 1 nos (large and grated)
Salt: As per taste
Raw mango powder: 1 tablespoon (lemon juice can also be used instead)
Soy sauce: 1 tablespoon
Bread slices: As per requirement (edges removed)
Egg: 4 nos
Oil: As per requirement
Hard boil the eggs and cut each into four pieces. Heat up some oil in a pan and sauté the onion and green chilies. Once it softens, add the beetroot and spinach. Once the mix is cooked, add the potatoes. Mix well and mash together. Into this mix add the raw mango powder and soy sauce. Incorporate it well and take it off the heat.
Once the mix cools down, cover each piece of egg with this mix. Use the bread slices to wrap the eggs and deep fry it in oil. Serve hot with tomato sauce or mayonnaise.
