Mixture is probably one of the most enjoyed snacks in our country across all age groups. It is such a wonderful snack item that goes well on any occasion, time or place. Mixture is also a great snack to munch on while watching a game or movie with friends or family. However, not all mixture that is available in the market is healthy. Here is how to make mixture at home.
In a bowl add the gram flour, rice flour, turmeric powder, chilli powder and asafoetida. Add water gradually and prepare a dough softer than chapati dough.
In a deep pan, heat up oil. Fill the dough in a handheld kitchen press (Idiyappam maker) with the small disc. Fry the dough in the oil by moving the arms in a circular motion while using the kitchen press to squeeze the dough in to the oil. Remove when the dough is golden brown and place it on a paper towel to absorb excess oil.
Add water into the remaining dough and create a batter in the consistency used to make dosa. Lower a steel or aluminium strainer into the oil and let the batter drip into the oil to create small fried balls. Remove when the balls are golden brown and place it on a paper towel to absorb excess oil.
Fry the Bengal gram and split Bengal gram in the oil. Turn off the heat and fry the curry leaves and dried red chilli. Break the fried dough by hand and mix all the fried items together. Mixture ready. Store in air-tight containers.
(For those who prefer it, peanut and green peas can be fried and added the same way as Bengal gram)
