Tapioca is a traditional food item which is common in Kerala. A variety of dishes can be prepared using tapioca including main course and snacks. Let's try yummy-crispy tapioca vada which is great to go with tea or coffee. 

Tapioca: 1 kg
Ginger: A small piece
Onion: 1 nos
Green Chilli: 5 nos
Chilli Powder: 1 table spn
Maida: 2 Table spn
Oil: As required
Salt: As required

Clean the tapioca by removing the skin, cut into pieces and wash properly. Pressure cook the tapioca for a whistle. After draining the water, mash the tapioca and keep it aside. Add finely chopped onion, green chilli, ginger into it and mix them well. Add chilli powder and maida to it and mix them properly. Make small balls and flatten it between the palms to give it shape. Heat the oil in a pan and drop slowly into the hot oil. Deep fry the vada until they become golden brown. Serve it hot with tea.
