Breadfruit cutlet is a vegans favourite
Cutlets are a favourite snack item. However, most of it is made using beef, chicken or fish. But what about the vegetarians? Here is how to make lip-smacking cutlets using breadfruit.
Breadfruit: 1 (large minced)
Onion: 1 (large, finely chopped)
Ginger and Garlic: 1 tablespoon (minced)
Green chili: 2 nos (finely chopped)
Chili powder: 1 teaspoon
Coriander powder: 1 ½ teaspoon
Black pepper powder: 1 teaspoon
Turmeric powder: ¼ teaspoon
Garam masala: 1 teaspoon
Coriander leaves: 2 tablespoons (finely chopped)
Egg: 1 nos (AVOID FOR VEG)
Bread crumbs: 2 cups
Salt: As per taste
Oil: For frying
How to prepare
Skin the breadfruit and remove the core. Cut into large chunks and cook with salt. Mince finely and keep it aside.
In a pan, heat up some oil and sauté the onion, green chili, ginger and garlic. Once the ingredients start turning brown, add all the spices. Mix thoroughly and keep sauté for one or two minutes. Then add the cooked breadfruit and coriander leaves. Let it cool down to a manageable temperature. Roll the breadfruit into small balls
Beat the eggs and add salt and black pepper. Flatten the breadfruit into the shape of cutlets. Dip the cutlets first in egg batter and then in the breadcrumbs and deep fry.
(For vegetarians, avoid the egg batter and over the cutlets in breadcrumbs alone before deep frying)
