Made using banana and egg whites, Unnakakya is a traditional snack that is a must on the table while breaking fast for Eid. Here is how to make it.
Banana: 1 kg (less ripe the better)
Grated coconut: Of ½ coconut
Egg whites: Of 4 eggs
Ghee: 4 teaspoon
Cardamom powder: 1 teaspoon
Sugar: 200 grams
Roasted cashew nuts: 100 grams
Raisins: 100 grams (heated)
Bread crumbs: As per requirement
Water: 1 cup
In a pressure cooker, cook the bananas (with the skin) in 1 cup of water until one whistle. Then peal the bananas and blend it into a paste (while hot) using a mixer grinder.
In a bowl, add the grated coconut, cardamom, cashew nuts and raisins and mix well. take the banana paste and roll it into a ball. Fill the mixture in it and make it into the shape of Unnakkaya. (Apply oil on the palms to prevent the banana paste from sticking). In a pan, heat up the ghee.
Dip the Unnakkaya in egg white and bread crumbs before shallow frying in the ghee. Make sure that all sides are well cooked and caramelised.
