Kaju Katli (also known as Kaju Barfi or Cashew Barfi) is a Diwali special sweet, extremely popular in North India. This lip-smacking sweet is truly delicious and easy-to-make dessert at home.
Cashew nuts - 1 cup
Sugar – 1/2 cup
Water - 1/2 cup
Ghee – Accordingly
Wash the cashew nuts properly and dry it. Powder the nuts. Take care of the consistency as paste form is not desirable.
In a pan add water and sugar and cook in low flame. Wait until it becomes a thick syrup.
Now add the cashew nut powder. If required add cardamom powder. Mix well.
Stir this mixture for about 5-10 minutes or till it starts to thicken and remove it from the burner. Allow it to cool slightly.
Then transfer this mixture to a steel plate coated with ghee and knead the mixture well.
Using a rolling pin, gently roll the dough to half an inch thickness sheet. Cut the sheet in diamond shape and allow it to cool completely.
Could be served immediately or within five six days. If kept in fridge, it can be used for almost a month.
