The Malabar region in Kerala is known for its unique cuisine. It is popular for the rich flavours, aromas, and ingredients present in their soulful dishes. During his recent visit to Kerala, Rahul Gandhi was served the typical Kerala style sadya on a banana leaf. One of the dishes served was the Wayanad special chicken fry. The dish is a burst of flavours. Let’s see how its prepared.
Chicken cleaned and cut into small pieces- ½ kg
Ginger paste- based on requirement
Garlic paste- based on requirement
Dried red chili- 2 tbs
Shallot paste- based on requirement
Turmeric powder- 1 tbs
Gram flour- 2 tbs
Garam masala- 1 tbs
Cumin powder- 1 tbs
Saunf- 1 tbs
Salt- based on requirement
Lemon juice- 2 tbs
Method of preparation:
Mix all the spices and make it into a paste. Rub it onto the chicken pieces and leave it for 20 min. After 20 min, fry it using coconut oil.
