This Aviyal recipe is for eggetarians
Aviyal is a traditional Kerala dish and an essential item in the sadya. Although it’s a pure vegetarian dish, here is a recipe that incorporates eggs into the traditional Aviyal. You need to try this if you are an eggetarian.
- Eggs: 4 nos (boiled)
- Oil: 3 tablespoons
- Coconut: 2 tablespoons
- Cumin: 1 teaspoon
- Shallot: 2 nos
- Green chilli: 4 nos
- Potato: 2 nos (roughly chopped)
- Tamarind water: 1 teaspoon (thick)
- Turmeric powder: ¼ teaspoon
- Chilli powder: ½ teaspoon
- Salt: As per taste
- Curry leaves: For garnish
- Water: 2 cups
How to prepare
In a deep pan, cook the potatoes along with tamarind water and two cups of water. Finely crush the shallots, cumin, green chilli and turmeric.
Heat some oil in a pan and sauté the crushed items until translucent. Then add the chilli powder and salt and sauté for two minutes. Then add the cooked potatoes and cook for 10-15 minutes.
Quarter the eggs and add them into the curry (be careful not to crumble them) Cook on a low heat with the lid on for 5 more minutes. Then pour over coconut oil and garnish with curry leaves.
