Sprouted green grams stir fry
Sprouts are a healthier alternative than using regular pulses. Here is how to make a tasty stir fry using green grams.
- Sprouted green gram: 200 grams (roughly chopped)
- Onion: 1 nos (finely sliced)
- Garlic: 6 cloves (finely sliced)
- Green chilli: 2 nos (finely sliced)
- Grated coconut: 1/2 cup
- Turmeric powder: 1 pinch
- Eggs: 2 nos
- Oil: 2 tablespoons
- Salt: As per taste
- Curry leaves: 1 sprig
Heat up oil in a pan and saute the onions, green chilli, garlic and curry leaves. Once the onions are softened, add the sprouted green grams and grated coconut. No need to add water. Cook on a low heat for two minutes. Create a well in the centre and crack in the eggs. Scramble them and thoroughly incorporate with the green grams. Cook with the lid on for one or two minutes. Take it off the heat and serve hot.
