Stir fries are easy to cook and taste great. They also open up new doors for experiments using different ingredients and spices. Here is a peanut recipe that is sure raise some eyebrows and conquer taste buds.
Soak the peanuts in water and skin them. In a deep pan, heat up coconut oil and crackle mustard seeds. Add the red chilli flakes and curry leaves and sauté for a few minutes. Then add the onions and peanuts. Sauté well until the peanuts lose their rawness. Then add the salt and pepper. Pour in some water and cook with the lid on until the peanuts are cooked through. Once the water evaporates, add coconut along with crushed garlic, fennel seeds and green chilli. Serve hot.
