Palak spinach: 1 bunch (chopped)
Onion: ½ cup (chopped)
Green chili: 5 nos
Turmeric powder: ¼ teaspoon
Mustard seeds: ¼ teaspoon
Grated coconut: As per requirement
Oil: 1 teaspoon
Eggs: 2 nos
Salt: As per taste
How to prepare
In a pan, heat up oil and crackle the mustard seeds. Add in the onion and green chilies and sauté until they soften. Add the Palak spinach and cook with the lid on for a few minutes on a low flame. Later sear the spinach on a high heat to dry it out. Once the spinach is almost cooked, reduce the heat and move it to one side of the pan.
Crack in the eggs to the other side and scramble it. Once the eggs start to set, mix it thoroughly with the spinach. Add in the turmeric powder and grated coconut. Mix well and cook for a minute with the lid on. Once it starts steaming, cook for another minute with the lid off. Palak spinach with scrambled eggs is ready. Serve hot.
