Mutton liver is a favorite among food lovers and is a star on the dining table. Here is an easy dry fried mutton liver recipe sure to make you crave for more.
Mutton liver: 1 kilogram (chopped into pieces)
Onion: 2 nos (roughly chopped)
Tomato: 1 nos
Ginger: 2 tablespoons (crushed)
Curry leaves: 4 leaflets
Coriander leaves: ¼ cup
Green chili: 4 nos (thinly sliced)
Coriander powder: 2 tablespoons
Turmeric powder: 2 tablespoons
Black pepper powder: 1 tablespoon
Garam masala: 2 teaspoon
Shallots: ¼ cup (thinly sliced)
Coconut oil: 3 tablespoons
Salt: As per taste
Water: As per requirement
Wash and drain the mutton liver thoroughly. Add the onion, tomato, ginger, half of the curry leaves and coriander leaves, coriander powder, turmeric powder, black pepper powder, garam masala, a tablespoon of coconut oil and salt into the liver and mix well. Keep it aside for 30 minutes and then pressure cook with a little bit of water (enough to prevent the liver from sticking to the bottom).
In a deep pan, heat up two tablespoons of coconut oil and fry the remaining curry leaves and green chili. Remove the curry leaves and green chili from the pan and keep is aside. In the coconut oil, fry the shallots until golden brown. Add the cooked liver and keep sautéing. Add in the fried green chili and curry leaves and mix well. Garnish with the remaining coriander leaves and serve hot.
