Here is how to make the nutritious and tasty Jackfruit leaves stir fry
Jackfruit leaves: 2 cups - finely chopped after removing the stems (All leaves from small buds to the tender light green ones which have not fully grown can be used)
Coconut: ½ cup (chunks)
Shallots: 3 nos
Green chilli: 2 nos
Mustard seeds: ½ teaspoon
Coconut oil: 2 table spoons
Salt: As per taste
Steam the jackfruit leaves for 10 minutes. Roughly crush the coconut, shallots and green chilli along with salt using a mixer grinder or pestle and mortar.
In a pan, heat up some coconut oil and crackle the mustard seeds. Add the steamed jackfruit leaves and gently sauté them for a few minutes on a medium heat. Add the crushed coconut mixture and mix thoroughly. Continue to cook on a low-medium heat with a lid on. Intermediately sprinkle water. Once the leaves are well cooked, take it off the heat. Serve hot.
For those who want to enjoy jackfruit leaves with green grams, cook green grams (half or 1/3 the amount of jackfruit leaves) with salt. Add it into the pan after adding the crushed coconut mix. Make sure to adjust the seasonings as the green grams are already salted.
(Jackfruit leaves take a long time to cook hence the leaves must be finely chopped and steamed before cooking)
