How about an egg salad?
Salads need not be full of fruits or vegetables chopped up. You can add the versatile egg to make it bold and filling. Here is how.
- Egg: 2 (boiled and peeled)
- Potato: 1 (boiled and peeled)
- Onion: 1
- Tomato: 1
- Lemon: 1
- Coriander leaves: For garnishing
- Black pepper powder: ¼ teaspoon
- Salt: As per taste
Chop up the potato, eggs, onion and tomato into small chunks. Add them into a bowl and mix well. Then squeeze in the lime juice, black pepper and salt. Mix well and garnish with coriander leaves.
