Here is a recipe that will help you bring some variety into your everyday lunch. It's tasty and nutritious. Try corn-rice.
Ingredients
- Basmati rice: 250 grams
- Corn: 80 grams
- Olive oil: 2 teaspoons
- Onion: 1 nos (chopped)
- Ginger-garlic paste: 1 teaspoon
- Salt: As per taste
- Green chilli: 4 nos
- Bay leaf: 1 nos
- Black peppercorns: 1/2 teaspoon
- Cloves: 8 nos
- Hot water: 2 cups
- Coriander leaves: 3 tablespoons (chopped)
- Lime juice: 2 teaspoons
- Red and yellow bell peppers (chopped): As per preference
- Grated coconut: As per preference
Preparation
Wash the basmati rice and soak it for 20 minutes. Grind the coconut, 2 green chillies and coriander leaves. Keep it aside. Heat up olive oil in a pan and sauté the cloves, bay leaf and black peppercorns. Then add the onion and sauté. Slice the remaining green chillies lengthwise and add it to the onions. Once the onions, start to soften, add the ginger-garlic paste and sauté for a few minutes. Then add the corn and mix well. Add the soaked rice and mix well. Pour in hot water and add salt to taste. Cook with the lid on for 15 minutes. Add the coconut paste and bell peppers. Mix well and garnish with coriander leaves.
