Singer Swetha Mohan has shared her favourite fantasy mango pudding recipe prepared by her mother-in-law Padmaja. Here is how to make it.
Ingredients
- Mango: 1 large and ripe (peeled and finely diced)
- Milk: 1/2 litre
- Sugar: 6 tablespoons
- Custard powder: 4 tablespoons
- Vanilla essence: some
- Arrowroot biscuits: 8 nos
- Coffee decoction: Some
- Chocolate: 50 grams
Preparation
Add a few tablespoons of milk to the custard powder and mix it without lumps. Boil the remaining milk with sugar. Once done, add the custard and 1 top of vanilla essence and mix well. Let it cool down to normal temperature. Break the biscuits in half and dip them completely in coffee decoction. Arrange them on the bottom of the dish in which the pudding is to be made (a 7 inch glass tray will do). Then spread half the mango on top of the biscuits. Pour in the custard mixed milk and spread it evenly. Freeze for two hours.
Melt the chocolate (add a bit of boiled milk to melt it easily). Take out the custard from the freezer and pour over the chocolate. Then add the remaining mango pieces and put it back in the freezer. Serve once it's set.
