Cool yourself down with jackfruit ice cream
Lockdown has made us realise the value and versatility of jackfruit. Here is how to make ice cream using jackfruit.
- Jackfruit: 250 grams (the sweeter the better)
- Sugar: 100 grams
- Super-fine sugar: 50 grams
- Whipping cream: 250 ml
- Coconut milk: 250 ml (first extract)
Finely mince the jackfruit. Throw them into a pan and add the sugar. Cook on a low heat until the sugar is completely dissolved and the jackfruits are soft and cooked. Take it off the heat and let it cool down to room temperature. Throw it into a blender/mixer-grinder and whiz into a fine paste. Add the whipping cream, coconut milk and superfine sugar into a bowl and whisk thoroughly. Then keep it in the refrigerator to freeze. Once set, add it into the blender/mixer-grinder with the jackfruit and whiz. Transfer it to a bowl and keep it in the refrigerator again to set.
