Anyone can make this eggless carrot-dates cake
Christmas is a time for cakes and celebration. Usually, we would head to the nearest bakery to buy cakes for Christmas or any other occasion for that matter. Here is a very simple recipe to make a cake with the very basic ingredients in any kitchen. Vegetarians will be extremely happy with this recipe as it is eggless.
- Carrot: 1 cup (grated)
- Dates: 1 cup (seedless - grated or finely chopped)
- Maida: 1 ¼ cup
- Salt: 1 pinch
- Baking powder: 1 teaspoon
- Baking soda: 1/2 teaspoon
- Cardamom powder: 1/4 teaspoon
- Cinnamon powder: 1/4 teaspoon
- Sunflower oil: 1/2 cup
- Brown sugar: 3/4 cup
- Warm milk: 1/4 cup
- Curd: 1/2 cup
- Vanilla essence: 1/2 teaspoon
Mix the carrot and dates in bowl. Add one or two teaspoon of maida and mix well to remove excess moisture from carrot and dates. Take the ingredients 3 to 8 and put them through a strainer or sieve to remove any lumps or seeds. Preheat the microwave oven/OTG to 200 degree Celsius.
If you don’t have an oven, take a pressure cooker, remove the wash and whistle. Put a steel or aluminium ring in the middle on which the tray carrying the cake mix will be kept.
In a bowl, mix sunflower oil, brown sugar and milk. If an egg beater or mixing machine is used, keep it in slow speed. Add curd and vanilla essence and mix well. Slowly add the strained maida little by little and beat again. Now add the carrots and dates and mix well.
Apply oil on a baking tray (any steel or aluminium dish can be used instead of baking tray). Use butter paper to cover the inside of the dish and apply sunflower oil over it as well.
Pour the cake mix into the baking tray and level it evenly. Cook at 160 degree Celsius for 50 minutes to 1 hour. If using a pressure cooker, keep the flame low and cook for 1 hour. Either way, do not open until 35 minutes.
