Throw the coconut, chilli powder, turmeric powder, salt and cumin into pestle and mortar and crush them. In a pan, heat up a teaspoon of coconut oil and crackle the mustard seeds. Add onion, ginger, curry leaves and green chillies and sauté them. After the onions are softened, add in the crushed items and mix well. Move the mix to one side of the pan and pour in the remaining coconut oil and crack in the two eggs. Scramble the eggs and add the tomatoes. Keep sautéing until the tomatoes are cooked. Serve hot.
