Oil: 1 tablespoon
Onion: 2 (thinly sliced)
Tomato: 8-10 nos (pealed and chopped)
Cumin powder: 2 teaspoons
Turmeric power: 1 teaspoon
Eggs: 5 nos
Green chili: 5-6 nos
Coriander leaves: 2 teaspoons
Salt: as per taste
Heat up the oil in a pan and sauté the onions until they soften. Then add the peeled tomatoes. Add cumin powder, turmeric powder and salt and cook with the lid on. Once the mix is cooked, crack in the eggs one by one. Garnish with the fresh coriander leaves and green chili.
Tasty tomato-egg curry is ready.
