Mushrooms are a healthy option that is easy to cook and nutritious at the same time. Here is an omelet recipe with mushroom that will taste equally good for breakfast, dinner or as a snack.
Mushroom: 50 grams (cleaned and chopped)
Eggs: 2 nos
Shallots: 1 tablespoon (diced)
Green chili: 1 tablespoon (chopped)
Black pepper (powder): 1 pinch
Fresh coriander leaves: as per requirement (chopped)
Coconut oil: 1 tablespoon
Salt: As per requirement
Beat the eggs with salt, pepper and coriander leaves and keep it aside. Heat up some oil in a pan and sauté the mushrooms with shallots and green chili. Once this mixture is cooked, add it to the egg batter and cook in a flat pan just like a normal omelet.
