Egg-oats upma has double the taste and nutrition
Oats and eggs are two of the healthiest ingredients that one can think of. Here is a recipe that combines the goodness of both. This Egg-oats upma can be a super nutritious and tasty breakfast to keep you going for the whole day or a recharging evening snack.
- Oats: ¾ cups
- Egg: 1 nos
- Oil: 1 teaspoon
- Green chilli: 1 (minced)
- Ginger: 1 teaspoon (minced)
- Mustard/cumin: ½ teaspoon
- Carrot, Green peas, beans and capsicum: ¼ cup (Finely dice the vegetables)
- Onion: 1 nos (finely diced)
- Turmeric powder: As per taste
- Salt: As per taste
- Lemon juice: Of 1 lime
- Coriander leaves: As per requirement (finely chopped)
(Use pre-cooked green peas if not raw)
How to prepare
In a pan, heat up some oil and crackle the mustard seeds. Those who like cumin can use it as an alternative or add also. Then add the onion, ginger and green chillies. Once the onions are translucent, add green peas and vegetables. Cook on a low heat with the lid on.
Then add the oats, turmeric powder and salt. Mix well and keep sautéing for a few minutes until the oats is cooked. Crack in the egg and mix it well. Once the mix reaches the desired consistency, add the lemon juice and coriander leaves. Mix well and serve hot.
