Egg roast is an easy recipe that anyone can cook in no time. Here is an easier recipe.
Eggs: 4 nos (hard boiled)
Green chili: 8 nos
Onion: 4 (thinly sliced)
Tomato: 2 nos (thinly sliced)
Ginger: 1 thumb sized piece
Garlic: 5 cloves
Chili powder: 1 tablespoon
Coriander powder: 1 tablespoon
Black pepper powder: 1½ tablespoon
Garam masala powder: 1 teaspoon
Oil: As per requirement
Curry leaves: As per requirement
Salt: As per taste
Heat up oil in a pan and sauté the onion, ginger, garlic, green chili and curry leaves. Once they soften, add the salt. Mix well and then add the tomatoes. Sauté well and then add all the spices. The add the boiled eggs and cook with the lid on.
Open the lid after 5 minutes and sauté well so that the mix is well coated on the eggs. Egg roast is ready.
