Chicken and wild mushroom is a naughty combination that has its roots in Latin America. Here is the recipe.
Ingredients
- Chicken (boneless): 500 grams (chopped into small pieces)
- Celery (sliced): 5 grams
- Parsley (sliced): 5 grams
- Egg white: Of 2 eggs
- Wild mushrooms: 50 grams
- Butter: As per requirement
- Black pepper powder: As per taste
- Salt: As per taste
- Vegetable/chicken stock (thickened): As per requirement (optional)
Preparation
Soak the wild mushroom in water for 1 hour. Take the chicken in a bowl and add the celery, parsley and salt and mix well. Add the egg whites and coat all the chicken pieces. Lay the chicken pieces in an aluminum foil and roll it up. Cook in an oven until ready. Drain the mushrooms and roughly chop them. Melt butter in a pan and cook the mushrooms. Add black pepper to taste. Once they are almost ready, take the chicken out of the oven and slice it into ½ cm thick discs. Add this to the mushrooms and cook for a few minutes. Take it off the heat and transfer it into a serving plate. Pour the thickened vegetable/chicken stock on top (optional). Serve hot.
