Ingredients
- Basmati rice: 250 grams
- Onion: 80 grams (finely sliced)
- Ginger: 2 grams (finely sliced)
- Turmeric: 2 teaspoons (crushed)
- Curry leaves: 2 sprigs
- Lemongrass: 2 grams (finely sliced)
- Coconut milk: 1 cup
- Salt: As per taste
- Curry powder: 2 teaspoons (heated)
- Pineapple: 1 nos
- Oil: 4 tablespoons
- Water: As per requirement
Preparation
Soak the basmati rice in water for 30 minutes. Slice the pineapple in half lengthwise. Scoop out the inside of one half to use as a bowl. The scooped out pineapple pieces can be used as garnish. Remove the skin of the other half of the pineapple and chop them into chunks. Heat up oil in a pan and sauté the onions. Once it's golden brown, add the ginger, curry leaves, turmeric and lemongrass. Once the spices are softened, drain the soaked rice into the pan. Add adequate amount of water to cook the rice along with curry powder and salt. Pour in the coconut milk and pineapple pieces. Mix well and cook with a lid on until the rice is ready. Turn off the heat and transfer the rice into the scooped pineapple. Cover with an aluminium foil and let it sit for 5 minutes. Garnish with scooped pineapple pieces and serve hot.
