Manjoorian is the favourite dish of food lovers, especially vegetarians. Gopi Manjoorian made from cauliflower is available everywhere. Here is a special Manjoorian for eggetarians that is just as simple and easy.
Ingredients
Egg: 5 nos
Onion: 2 (medium sized, roughly chopped)
Capsicum: 1 large (roughly chopped)
Green chilli: 2 nos (sliced)
Black pepper powder: 1 teaspoon
Kashmiri chilli powder: ½ teaspoon
Cornflour: 2 tablespoons
Maida/All-purpose flour: 1 teaspoon
Salt: As per taste
Soy sauce: 1 teaspoon
Tomato sauce: 2 teaspoon
Red chilli paste: 1 teaspoon
Ginger garlic paste: 1½ teaspoon
Coriander leafs: 2 teaspoon (minced)
Water: As per requirement
Oil: As per requirement
How to prepare
In a bowl, beat the egg along with pepper powder and salt. Steam the eggs just like making steam cakes. Cut the egg-cake into small pieces and keep it aside.
Mix cornflour, maida, soy sauce, chilli sauce, chilli powder, salt and 1 teaspoon of ginger garlic paste with water into a thick batter. Then, dip all the egg pieces in the batter and deep fry them in oil.
Heat up some oil in a frying pan and lightly fry the onions and capsicum. Add the salt, ½ teaspoon of ginger garlic paste and green chillies. Once the onions start becoming translucent, add the mix of tomato sauce, red chilli sauce, soya sauce into the onions.
Mix properly and sauté for 3 minutes before adding the fried egg pieces. Mix some water in two teaspoons of cornflour to make a loose slurry. Add ¼ cup of the slurry into the pan and mix well. Ensure that the ingredients are well coated in the slurry. Cook on a medium heat with the lid on for 5-6 minutes. Take it off the heat and garnish with the chopped coriander leaves. Serve hot.
